今年的中秋節雖然要等到10月才登場,但不少人早就開始揪親友團聚烤肉了。不過營養師陳冠蓉提醒,烤肉雖然美味卻暗藏陷阱,若食材和調味沒挑對,可能讓身體默默「中毒」,她特別點出3大NG食物,包括香腸、培根等加工肉品、過量刷醬,以及高油脂的五花肉,這些不僅會增加罹癌與代謝疾病風險,也會對肝腎造成負擔,她建議,若想兼顧美味與健康,就要注意烹調方式和食材的搭配,才能安心享受中秋節的烤肉聚。

陳冠蓉近日在個人臉書粉專發文,解釋加工肉在烤製過程中,保色劑可能與蛋白質作用產生亞硝胺,加上本身含鹽、糖及多種添加物,長期食用會提高肝腎壓力;蜜汁、燒烤醬則常被過度使用,高溫下容易發生糖化反應,生成「糖化終產物」,不僅加速老化,還與慢性發炎、糖尿病及心血管疾病有關;至於肥滋滋的五花肉,高脂肪容易讓膽固醇和血脂升高,甚至因油脂滴落炭火產生大量煙霧,其中的「多環芳香烴」同樣是致癌物,附著在食物表面就可能增加健康風險。

那麼該怎麼吃才比較安心?陳冠蓉提出3大原則:加工肉可以先汆燙再烤,並搭配富含維生素C的水果或蔬菜,像是芭樂、甜椒,來降低致癌物合成;醬料則建議在烤好後再刷,甚至用檸檬汁、香料取代,既能調味也有抗氧化效果;此外,用烤盤取代烤網,能減少食材被火烤焦,避免油脂滴落產生過多煙霧。她還推薦烤肉時多搭配青花椰苗,不僅解膩,還能補充植化素「蘿蔔硫素」,幫助抗氧化、防癌,還可以開啟體內自動排毒系統,她強調只要把握正確方式,大家在中秋團聚時也能吃得盡興又無負擔。
